Paleo Cinnamon Roll Cake


Paleo Cinnamon rolls aren’t the easiest thing going …  if you’ve ever tried to make them.

{I’ve had a few fails myself!}

They’re dense.  Hard to roll.  Easy to fall apart.

I still make them though, because they TASTE great… and that’s what matters, right?  Not how things LOOK?

But then I saw this recipe for a regular version of cinnamon roll cake.  I though… hmmm…  I bet I could make that Paleo?

And I did!

It was way easier than paleo cinnamon rolls and family loved it.  I think you would even SKIP the glaze sauce…  and obviously this is a special treat, because it’s pretty sugar loaded.  BUT, considering what a regular cinnamon roll would be – this is a much better option.




1 cup coconut palm sugar

4 tsp. baking powder

1 1/2 cups canned coconut milk

3 eggs

2 tsp. vanilla

1/2 cup of coconut butter

1 cup of almond flour

1 cup of arrowroot flour

1/2 cup of coconut flour


1/2 cup of coconut oil or coconut butter

1/2 cup of coconut sugar

2 T. coconut flour

1 T. cinnamon


Top with 1/4 cup diced pecans after you swirl cake and topping.

Mix everything for the cake.  Pour into 9×13 baking dish.  Drop topping evenly over batter and swirl with knife.  Bake at 350 for 30 minutes.  When cooled, (if desired) top with glaze before serving.

Another Love


No, I’m not cheating on my diet, or anything for that matter!!  (I prefer the word CHOICE, vs. cheat anyway… every choice has a consequence!)  I just found another GREAT new Paleo cookbook that I had to share, because you’re definitely going to want this one too!

The layout and form remind me of Against All Grain, which should be a staple in any healthy kitchen – but with some additional great twists and creative dishes galore!

You know me, the first place I dig is for is the desserts, and snacks.  I love things to go with our healthy meals… (and this book has PLENTY of great ideas there too!)  It’s therapy to bake things I can’t have.  So far I’ve made the chives crackers for my husband (who loves some stinky-crunchy snacks!) and some SWIRL cookies for the kids… which were GONE in one day.  (I made them for soccer snacks, dessert and frozen some back for my Bible study girls as well)

We tried out the pumpkin pancakes this weekend and they were a grand slam.  If you’ve ever attempted paleo pumpkin pancakes, you’ve probably ended up with a HUGE mess.  Not so with this recipe!  Super easy to follow – and lovely consistency as well!

Again, I think it was the different flour combos, similarly to Against All Grain.  I did also try some new flours – which (sadly) put Bob’s Red Mill to shame.  (Sorry Bob!)  The brand is Honeyville, and I got it off of  They are finer in texture, and come in 5lb bags!!  (Thank you Lord for larger bags, because we go through a lot!)

Sweet Treat

My kids LOVE popsicles in the summer time… but I don’t love the price for gluten-free/dairy-free treats – at 4 in a box for $6+, gasp!  Thankfully, due to the internet, there are tons of options out there that won’t make us go broke, and without any preservatives!

All you need is some BPA free popsicle molds, that were dishwasher safe – like the ones my friend told me about on a tip from the 100daysofrealfood blog.  I bought two sets from, and I was in business.

We just grabbed a few ingredients that we had on hand and went to work dumping things into the blender, pouring them out and freezing!  (that took some patience but they were SO worth it!)  This filled up 12 molds, with a bit left over to refill 4 more the following day.

* 1 whole pineapple diced up

* 1 banana

* 1 can of coconut milk

* 1/2 tsp pure vanilla

* 2 Tablespoons raw honey

There are several with berries, and I’ve seen a chocolate we’re excited to try as well!  YUM!

I Don’t Feel Like Eating… But You Must!

Hello July!  It’s great to see you!  I’m not sure if it’s hot where you are… but the temperature has been FIRE HOT here.  Sometimes that can make us lose the desire to eat much… and I suppose that can be a good thing, if over eating is an issue for you.

One of the things I’ve encountered over the years, was a lack of a desire to eat.  Whether I was going out to eat some where new, vacationing, in a stressful situation…. most “events” revolve around food.

When you have GI issues, this can be a nightmare.  You don’t want to be rude… and you don’t want to be sick… and you don’t really want to worry about it – you just want to EAT!!

Inevitably someone might ask, “Did you try THIS?”  or “This is so great… aren’t you going to eat any of this?”

I always tried to say something short and sweet…. to the effect of, “No thank you….” or “I’m full….”  or “I try to stick with things I know don’t upset my tummy.”

That usually was followed up by strange looks, a rolling of the eyes… or some comment about how I never try new things.

Now that I’m over that… or rather, I’m picky with a health-reason…

I still have days at home – after I’ve made the children their sandwiches or lunch…  that personally I just don’t feel like eating.

It’s hot, I’m tired… nothing sounds very good.

I know I have to eat…. and getting the RIGHT calories are important too!

So in one of my last horrific bouts of my celiac in full digestive swing, I was desperate to keep food and calories in – and I did the unthinkable (for me).  I began drinking my meals to get and keep the most basic food in.  I started with just spinach and fruit smoothies with SILK and switched it up with a drink mix called Vega One.

So about 6 months ago, when my friend Taryn mentioned a drink mix (Vega One) – I sort of shrugged it off.  I wasn’t big into drinking calories.  After she knew I was drinking smoothies – she must have seen her chance, and I’m SO glad she did.

Little did I know how thankful I would be…  She claimed it was tasty (I got chocolate, of course!) and it didn’t have artificial junk in it… it was also gluten, dairy and soy free.  It was also only 138 calories and 1g net sugar in the mixture itself.  When it said, “ALL NATURAL” – for once, this brand means it.  We got it at Vitacost.

Now it’s my go to drink when I’m feeling kinda bunk and don’t have salad supplies on hand.  It’s a great supplement and it IS totally tasty.  I even ordered the Vanilla one for my kids who are now lactose free as well!  They also offer it in berry, and in smaller quantities.  The only thing is that I don’t use a full scoop, and it does warn about working your way up to the fiber in it.  Even with my fussy tummy, it’s never been an issue.

Yea!  A Winner! 🙂
