Easy Summer Dishes

Not the prettiest plate – but it’s what it looked like when I slopped it on there!

One of my favorite things about summer time, is all of the fresh fruits and veggies available to us.

I also love grilling out!!

Do you think God made all fruits and vegetables colorful for a reason?

He really did think of everything!  They’re eye-catching, and we desire all of the colors.

What color is bread?

Blah.

Exactly, not a good color.  Try and eat fewer of the “BLAH” colors!!

I just wanted to share a little of my meal with you from this weekend.  We had some organic chicken on the grill (a little olive oil, a little pepper)… topped with fresh bruschetta.  (Minus the bread!)

We had some quinoa mixed with organic kidney beans, fresh steamed green beans, and red pepper, and some acorn squash.

I like to make my acorn squash in the crock pot so I don’t have to think about it again.  I wash, drop it in – put a cup of water in – and cook for 4-6 hours.  Take it out – cut and gut it.   Perfection!

Watermelon was for dessert.

Tonight I baked for the next two days to try to get a head start on our week!  Our LAST week, before school starts!

  1. Do you cook the squash in the crockpot on high or low? I want to try this.
