Down With That, Less Fat!

Happy 4th of July! Hope you celebrate the FREEDOM we have in our country, and the bountiful blessings we have! To God be the Glory!

I just finished up making gluten-free/lactose-free peanut butter cookies as well as some gf/lf shortcakes to go with some strawberries.  I did make a salad too  with greens and fruit…. we won’t JUST eat dessert!

I have always liked to bake.

It’s probably my downfall, and another reason why I like to workout.

I’m also always looking for ways to keep the fat and sugar down on the things I’m making for my family.

But, I DO NOT want to sacrifice taste!  No one likes a dry, hard, crumbly muffin, cookie or cake – right??

You don’t REALLY, do you?

I didn’t think so!  Me neither… 

I make a lot of muffins… mostly because they’re easy part of breakfast, portion control, and you can make 50 million different types.  (and hide flaxseed and other nutritious goodies in that your children won’t suspect!)

McCormick states that their flavorings are all gluten free… so I use their coffee flavor (with Enjoy Life Chocolate Chips)  and orange flavor (with dried cranberries) a lot.  They are my kids’ favorites!

Instead of oil – I use natural applesauce!  (Homemade is even better!)  When  I do use oil, it’s grapeseed, peanut or cold pressed olive oil.

(I love Namaste muffin mixes! We buy them in a 6 pack from!)
