Our BIG Weekend!

We had two big events this past weekend.  One was attending our first wedding …  eating gluten-free!

We packed our picnic dinner in a cooler, and away we went!  {I packed extra treats for the kids, to make up for no wedding cake… okay, maybe that was for myself.  The guilt was creeping in.}  The wedding was outdoors, so that was perfect!  We choose a table a bit secluded outside, and enjoyed our picnic dinner of sandwiches, lettuce turkey wraps, carrot chips and fruit!  Perfect!

Next, my husband has been wanting to take us to a Royals baseball game, so he bought the tickets on Friday to surprise our children Sunday morning after home church.  They were SO excited!  I was excited too – and had planned our lunches… but dinner was going to be a bit more tricky – Chick-fil-a is CLOSED on Sunday.  (Which by the way, I think is awesome…  I just didn’t know where we were going to eat – quickly, before going home!)

The game was awesome!  (Royals won!)  And other than having to go to the moon to get an iced tea at the stadium…  (Apparently people don’t drink TEA at baseball games?) – it was a fantastic experience.  The staff at the stadium was more than willing to lead me to where I needed to get my top-secret tea!

After the game, we started searching our FREE GF app (Find Me Gluten-Free) for dinner and came across some great reviews for Minsky’s pizza!  While their regular menu says, “Ask about our Gluten-Free menu.”  The one we went to said they didn’t have a specific menu, but the waitress was super helpful to point out our options.

We ordered 4 gluten-free mediums, one with lactose free Daiya cheese (which was delicious!)  The crusts were similar to a hand-tossed, and delicious!!  We will definitely be going back again!  We had brough plenty of other fruit and veggie options – so I was happy we could have a filling meal and enjoy some pizza that didn’t make us sick!

I look forward to the day when I’m not consumed with what and how we’ll eat!! (When do you suppose that will happen?) 🙂  Oh Lord, please come soon!!
