Saw this and had to share! It seems perfect for summer, and easy too! It’s from page 62 of “Gluten Free Made Simple”… but it’s great for anyone. Refreshing!
EASY CABBAGE SALAD
1 – 14 ounce package shredded cabbage with carrots
1 – 10 ounce can mandarin oranges, drained
1/4 cup whole almonds or almond slivers
1/2 cup gluten-free Italian or Oil and Vinegar dressing
* In a large bowl, combine the cabbage, oranges and almonds. Add dressing and toss to mix thoroughly. Serve immediately OR chill for up to 2 hours. Serves 8.
** always double-check labels to check for hidden gluten in the ingredients.
