Gluten Free Granola Bars

Mixing all of the dry ingredients!

1 cup corn syrup or honey
3/4 cup natural PB
1 c. gluten-free chocolate chips (I used enjoy life – gluten/soy/lactose free)
1/2 cup chopped (raw) almonds (honey roasted nuts can be a cross contaminate if you’re sensitive)
1/2 cup chopped (raw) cashews
2 cups gluten-free oats
2 cups gluten-free crispy rice cereal
1/3 cup flax-seed meal (I used golden)
Mix honey/syrup and PB in saucepan over low heat until smooth
remove saucepan from heat, stir in one cup of chocolate chips
Mix remaining chocolate chips, almonds, cashews, oatmeal, crispy rice cereal and flax-seed meal in bowl
Pour mixture over bowl and stir evenly to coat
Transfer mixture to 9×13 baking dish and press into even layer, allow to completely cool before cutting into bars.
**I doubled this – and then put it in a large flat pan.  It made 39 bars.

Tah-Dah! Very easy! Gluten Free Chocolate Peanut Butter granola bars!

  1. I do the same thing, I like to use Press and Seal to wrap them, they are very handy to have around for a quick snack.

  2. I remember you had said that – it was a huge encouragement for me to “just try it” for myself… and I’m glad I did! IT wasn’t bad at all, and everyone enjoyed helping. The Press and Seal is a GREAT idea… thanks! 🙂
