Gluten Free Granola Bars
1 cup corn syrup or honey
3/4 cup natural PB
1 c. gluten-free chocolate chips (I used enjoy life – gluten/soy/lactose free)
1/2 cup chopped (raw) almonds (honey roasted nuts can be a cross contaminate if you’re sensitive)
1/2 cup chopped (raw) cashews
2 cups gluten-free oats
2 cups gluten-free crispy rice cereal
1/3 cup flax-seed meal (I used golden)
Mix honey/syrup and PB in saucepan over low heat until smooth
remove saucepan from heat, stir in one cup of chocolate chips
Mix remaining chocolate chips, almonds, cashews, oatmeal, crispy rice cereal and flax-seed meal in bowl
Pour mixture over bowl and stir evenly to coat
Transfer mixture to 9×13 baking dish and press into even layer, allow to completely cool before cutting into bars.
