Broccoli, Asparagus, and Spinach Casserole
Hope this finds you doing wonderful on Holy Week! What a great spring we’ve had so far – I can’t believe it’s April, can you?
What does spring make you think of? Personally, I love it when every thing GREENS up! The sign of NEW life!
Summer can be a difficult time to cook for the family, and I’m always looking for new veggies to try! (Especially ones that are GREEN that my kids will eat and enjoy!)
This was a hit, I thought I’d share as you prepare to get some summer dishes in line!
Broccoli, Asparagus & Spinach Casserole
2 bunches of broccoli, diced
1 cup asparagus, diced
1 cup fresh spinach
1 slice each Swiss & Provolone cheeses
1 cup of plain greek yogurt
1 cup non fat or unsweetened almond milk
1 T garlic powder
Sea Salt and Pepper to taste
2 T grated parmesan for garnish
Preheat over to 350 degrees
Place first three ingredients into bowl
Shred Swiss, provolone and mozzarella cheese slices and add to bowl
Add yogurt, milk and garlic powder to taste.
Mix gently and pour into 9×13 casserole dish. Bake (covered) for 35-40 minutes at 350 degrees.
Add parmesan for garnish before plating.
