Homemade Oatmeal Pancakes

This is a recipe from a friend, that has been switched up just a bit to exclude refined sugar.  My kids *love* these, and a double batch makes enough for our whole family!

1 1/4 c. low-fat or non-fat buttermilk (can substitute 1T lemon juice per 1 c milk)

1/2 c. quick oats

1/2 t. vanilla extract

1T canola oil

1 large egg, lightly beaten

1 1/4 c. whole wheat/white flour

2T Sucanot

1/2 t baking soda

1/2 t. salt


Combine buttermilk, oats, and vanilla  – let stand 10 minutes stirring occasionally.  Stir in egg and oil.

While oats are soaking, lightly spoon flour into dry measuring cups; level with a knife.  Combine flour, sucanot, baking soda, and salt in large bowl.  Add oat mixture to flour mixture, stirring until smooth.  Spoon about 1/3 cup of batter onto a hot nonstick griddle or skillet.

** Great to add sliced bananas or blueberries to the batter.
